I have two things to address re: the Breville Custom Loaf bread machine. One: the issue of the collapsible paddle getting gummed up and not collapsing anymore and two: a breakdown of all the cycle times broken down by stages, for each type of bread and each size loaf.
Firstly: has your paddle frozen in one position? Can you (let alone the machine) not twist it back and forth anymore? Have you tried everything to clean it and figure you just need to buy a new one? Try this first.
Step one: Place paddle in a bowl or cup.
Step two: Pour boiling water over it.
Step three: A few minutes later fish it out with something and then holding it in something heatproof (as it will very much be hot) forcibly twist the two parts back and forth. Some gunk should come out.
Step four: With something non metallic like a toothpick scrape out all the gunk.
Step five: Repeat. And maybe repeat again.
That's it. This has worked for me so far.
Now for the charts. The Breville Custom Loaf breadmaker can make four sizes of bread and 11 different types of bread (plus a cycle for jam). My last breadmaker included a chart breaking down the times spent on each facet of each cycle, but since the Breville has so many different variations they did not include anything like that. So I made my own because I find it useful to know how long each stage takes. Download these if you'd like. There is a separate chart for each of the four sizes plus an additional chart for the cycles that are only one size. (So, I need to comment, that when checking that these downloads worked my Malwarebytes thought it was a suspicious site and blocked it. They are just Excel spreadsheets. But it's up to you if you want to download them.)
